WebOne thing I will say is you want to bring your steak fully up to room temperature before cooking, and then sear at a high temperature, in order to lessen the gradation between medium on the edges and rare in the center as much as possible. I like to pull my steaks out of the fridge at least a couple of hours before cooking them.
